Nonstick cooking spray, for spraying the baking mold
3 1/2 cups roasted oatmeal
1 cup Mini Marshmallows
4 tablespoons unsalted butter
1/4 cup of light brown sugar
1/4 cup honey
1/2 teaspoon of kosher salt
1/2 teaspoon vanilla
Inject an 8 inch square baking tray with non-stick cooking spray.
Combine the oatmeal and marshmallows in a large bowl.
Mix the butter, the brown sugar, the honey and the salt in a large saucepan and bring to a boil. Boil for 1 minute, then carefully stir in the vanilla. Add the cereal mixture and stir thoroughly.
Place the mixture in the prepared baking pan and press into a flat layer. Allow to cool and adjust, about 1 hour before cutting into squares.
